Crock Pot BBQ Pulled Pork

Ingredients:
  • 3lb pork butt roast
  • 1 12oz can of Coke (or Pepsi)
  • 12oz of Sweet Baby Ray's BBQ sauce
  • Lawry's Season Salt
  • Rolls
Directions:
  1. Coat Pork with Lawry's & place in crock pot
  2. Add bbq sauce & Coke
  3. Cook on low for 4-6 hours
  4. Using 2 forks, shred the pork, then let cook an additional 30 minutes to an hour
  5. Serve on rolls & enjoy!
Note: We will also throw in chopped up onion when the mood strikes us to change it up a bit.

Low Carb Philly Cheese Steak Sandwiches

Prep Time: 15 mins
Cook Time: 30 mins

Ingredients:
  • 16 oz. Thinly Sliced Roast Beef
  • 12 Slices Provolone Cheese
  • 5 Large Green Bell Peppers
  • 1 Large Sweet Onion
  • 6 oz. Mushrooms (optional, I leave these out)
  • 2 Tbs. Olive Oil
  • 1 Tbs. Garlic – Minced
  • Salt and Pepper – to taste


Directions:
  1. Preheat oven to 400
  2. Slice peppers in half lengthwise, remove ribs and seeds.
  3. Slice onions and mushrooms.  Saute over medium heat with olive oil, minced garlic and a little salt and pepper.  Saute until onions and mushroom are nice and caramelized.
  4. Slice roast beef into thin strips and add to the onion/mushroom mixture.  Allow to cook 5-10 minutes
  5. Line the inside of each pepper with (a slice) provolone cheese. 
  6. Fill each pepper with meat mixture until they are nearly overflowing.
  7. Top each pepper with another slice of provolone cheese.
  8. Bake for 15-20 minutes until the cheese on top is golden brown. 
  9. Serve and Enjoy!!
Notes: depending on the pepper I only use a half slice of cheese both in the bottom and on the top. When using Kraft Provolone cheese and Hillshire Farm thin sliced roast beef the WW points value was 4 points per half of a green pepper. (8 for a whole green pepper)

Buffalo Chicken Grilled Cheese

We love hot wings in our house (even our 2 1/2 year old!) however, they aren't so awesome on the waitline. We have found this alternative to be a great alternative!

Ingredients:
  • 1/4 cup cooked shredded chicken, warm
  • 1 tablespoon hot sauce
  • 1/2 tablespoon mayo (optional)
  • 1 tablespoon carrot, grated
  • 1 tablespoon celery, sliced
  • 1 tablespoon green or red onion, sliced or diced
  • 1 tablespoon blue cheese, room temperature, crumbled
  • 1/4 cup cheddar cheese, room temperature, grated
  • 1 tablespoon butter.

  • Directions:
    1. Mix the chicken, hot sauce, mayo, carrot, celery and onion in a small bowl.
    2. Butter the outside of each slice of bread, sprinkle half of the cheeses on the inside of one slice of bread, top with the buffalo chicken salad, the remaining cheese and finally the other slice of bread.
    3. Heat a non-stick pan over medium heat.
    4. Add the sandwich and grill until golden brown and the cheese has melted, about 2-4 minutes per side.
