Homemade Funfetti Cupcakes

Ingredients:
  • 1 cup all-purpose flour
  • 3/4 cup sugar
  • 1 1/2 tsp baking powder
  • pinch salt
  • 3 tbsp butter
  • 1/2 cup milk
  • 1 egg
  • 1 tsp vanilla extract
  • 1/8 cup sprinkles (aka jimmies)
    Directions:
  1.  Put the flour, sugar, baking powder, salt and butter in a mixing bowl and beat on slow speed until everything is combined and you have a crumb mixture with a sandy consistency.
  2.  Gradually pour in half the milk and beat just until the milk is incorporated.
  3. Whisk together the remaining milk, egg and vanilla.
  4. Pour into the flour mixture and beat until all ingredients are just incorporated.  
  5. Beat for another 30 seconds until batter is smooth. Do not overmix.
  6. Divide batter amongst cupcake liners and bake at 325F for about 15 to 20 minutes or until a skewer inserted in the centre comes out mostly clean.
  7. Cool before frosting. (we just used frosting from a can and more sprinkles! )
